Scottish Scones 2 cups flour 1 tsp cream of tartar 1/2 tsp baking soda 1/4 tsp salt 1/4 cup sugar 1/4 cup (1/2 stick) butter 1/2 cup plumped raisins* 1 egg milk Mix together dry ingredients, then cut in butter. Add raisins and egg. Add just enough milk to make a soft dough. Knead on a lightly floured counter. Roll out and cut into 1/2 inch thick rounds. Place on cookie sheet. Bake at 450 F for 8-10 minutes, or until bottoms are rather brown. *To plump raisins, put in pan and cover with water. Bring to a boil. Remove from heat and let sit in covered pan for 5 minutes. Drain.
