Scotch Shortbread AMERICAN RECIPE 1 cup soft butter 1/2 cup sugar 2 1/2 cups flour Mix the butter and sugar; add flour and mix throroughly with hands. Chill dough. Roll out about 1/2 inch thick. Cut into shapes, if desired, or small squares. Place on ungreased baking sheet and bake about 20-25 minutes at 300 degrees. (Note: the tops will NOT brown.) SCOTTISH RECIPE 3/4 + cup white flour 1/2 - sup sugar 1/4 cup butter 1/2 - cup rice flour Mix flours and sugar. Work in butter. Turn dough onto board sprinkled with rice flour and knead until smooth. Cut into 4 portions and shape into rounds. Place on non-stick baking pan. Prick tops with a fork. Bake at 350 degrees for 20-30 minutes, or until cakes begin to color. Cool in the pan.
