Pizza 3 cups warm water 3 tblsp yeast 3 tsp sugar 3 tsp salt 3 tblsp olive oil 7 1/2 + cups flour sauce Mozzarella cheese toppings (optional) Combine the water, sugar and yeast in a large bowl and let sit for several minutes until the yeast is frothy. Add the salt and oil and stir. Add half the flour and mix well. Add remaining flour, turn out onto floured counter, and knead until smooth (add more flour if necessary). Cover with a towel and let rise for about 1/2 hour (make sure it is warm and not drafty). Punch the dough down, and split into 4 pieces. Roll each into the shape of your pizza pan or cookie sheet. Place onto sheet and cover with sauce. Sprinkle with additional spices (i.e., salt, garlic, oregano) if you are using plain tomato sauce. Add toppings and cheese. Bake in a hot oven until done (about 400 F). It might take a few tries to get the exact oven temperature and time. I find that any longer than 20 minutes, and the cheese is too cooked, but sometimes it takes longer than that for the crust to bake! I usually put the pizza in with toppings but without cheese for 5 minutes, take it out, add the cheese, then bake for another 15-20 minutes. This recipe yields 4 pizzas. For leftovers, make 6 pizzas! It's 4 1/2 of everything and 11 1/2 cups of flour. This pizza freezes great.
