New England Pumpkin Pie (from One-Pie Brand pumpkin) 1 can (15-16 ounces) pumpkin 1 tbsp potato starch 1/2 tsp cinnamon 1/2 tsp ginger 1/2 tsp nutmeg 1/2 tsp salt 1 1/2 tbsp butter (melted) 1 1/2 cups milk OR 1 12-oz can evaporated milk 1 cup sugar 1/8 cup molasses 2 eggs (beaten) dash lemon juice (optional) Sift together dry ingredients; mix with pumpkin. Add beaten eggs, melted butter, molasses and milk. Add the dash of lemon juice (if desired). Pour into a 9-inch pie plate. Bake at 450 degrees for 15 minutes, then at 350 degrees for another 50 minutes.
