Hummus 1 cup cooked chickpeas 4 tbsp light tahini juice of 2 lemons 6 tbsp olive oil 3-4 garlic cloves, crushed salt to taste Mix chickpeas and 2/3 cup of its liquid in a blender. Add tahini, lemon juice, half of the olive oil, garlic and salt. Blend until smooth, adding more chickpea liquid if desired. Leave to stand for an hour (in the fridge, if preferred cold) to let the flavors develop. Drizzle the remaining olive oil on top. Goes great with homemade pita bread!
