Fried rice 2 1/2 cups cooked unbuttered rice 2 tbsp vegetable oil 2 eggs, beaten 1/4 cup diced thawed (not cooked) frozen carrots 1/2 cup thawed (not cooked) frozen peas 1/4 cup thinly sliced onion 3 tbsp soy sauce Optional: 1/2 cup diced chicken or ham Heat 1 tbsp oil in large skillet over medium-high heat. Cook eggs, breaking up with a fork; set aside. Cook carrots with meat in skillet in 1 tbsp oil for 5-7 minutes or until cooked. Add rice, peas, onions and soy sauce. Stir until well blended and heated through. At last minute, add cooked eggs.
